翌日早上,弄了藍莓櫻桃杏奶smoothie作為早餐飲品.
傍晚時分,用剩餘的做了藍莓批,那個買了一年多的迷你批焗盤終於可以開光.這個藍莓批用上改良了曲奇批底(沒有做酥皮,實在太肥),更試用了新買的玉米糖膠(Xanthan Gum),批饀內的果汁半凝固成果醬,效果超滿意,較街外買的味道更好,但糖份很低(因為食材新鮮又夠甜,不用加太多糖),是很健康又美味的飯後甜品.
夏天是多種有營生果的季節,大部分莓類都具有消炎和抗氧化的功效.早就聽聞過藍莓是有益的食品,但完全沒有去研究它為甚麼令身體更健康,直至讀完營養學,終於知道了一些皮毛,在此和大家分享一下.
藍莓是其中一種超高營養又低卡路里的超級食物(英文稱為Super Food).它含有維化命C和E,高纖維,鉀質和葉酸.研究證實它具有抗氧化,抗老化,提高認知能力,降低膽固醇,預防心臟病和癌症的功效,建議每天食用至少1/2杯.

曲奇批底食譜
Cookie Pie Crust Recipe
材料:
含鹽牛油(凍,切細粒) 6湯匙;另加少許塗鍋用
鹽 1/2 茶匙
糖 3 茶匙
發粉 3/4 茶匙
2%低脂牛奶 6 湯匙
Ingredients:
6
tablespoons Cold Butter (small cubes),
extra for greasing pan
1.5 cups All Purpose Flour, extra for
greasing pan
½ teaspoon Salt
3 teaspoons Sugar
¾ teaspoon Baking Powder
6 tablespoons 2% Milk
做法:
Steps:
1. 預熱焗爐至華氏425度.
1. Preheat the oven to 425F degree.
2. 用手指搓揉所有材料(牛奶除外),直至成為麵包糠狀.
2. Mix everything (but milk) with fingers until breadcrumb like.
3. 加入牛奶拌至混和.
3. Add milk and fold in until well combined.
4. 用少量麵粉灑滿桌面和粉糰,搓成圓條形後切成6等份.
4. Slightly flour the counter top, roll the dough into tube, divide into 6 equal pieces.
5. 用牛油和麵粉塗滿焗盤.
5. Grease pie pan with butter and flour.
6. 將小粉糰按成圓餅.
6. Press the pieces into round discs.
7. 用手指平均按壓粉餅至填滿焗盤,用叉在粉糰刺上大量小洞.
7.Press dough evenly on pie pan until well covered, use fork to poke multiple holes on pie crust.
8.放入焗爐10分鐘後,取出放涼至室溫.
8.Bake for 10 minutes, take out and cool down to room temperature.

Blueberries Pie Filling Recipe:
材料:
新鮮藍莓 2.5杯
紅糖 1/3杯
鮮榨檸檬汁 2湯匙
鹽 1/4 茶匙
麵粉 4湯匙
玉米糖膠 1/2 茶匙(可用1湯匙生粉代替)
Ingredients:
2.5 cups Fresh Blueberries
1/3 cup Light Brown Sugar
2 tablespoons Fresh Squeeze Lemon Juice
¼ teaspoon Salt
4 tablespoons All Purpose Flour
½ teaspoon Xanthan Gum (or 1 tablespoon cornstarch)
Steps:
1. Mix all ingredients well.
2. Fill the pie crust full with blueberries filling.

crumbles on top.
2. 焗13分鐘或直至表面糖皮轉金黄色,取出後放在金屬架上放涼5分鐘.
2. Bake for 13 minutes or the crumbles turn golden, remove and cool off on metal
rack for 5 minutes.
3. 從焗盤取出,放在鐵架上放涼5-10分鐘,配合鮮打忌廉食用.
3. Cool off on rack for 5-10 minutes, serve with fresh whip cream.
玉米糖膠令藍莓汁不會浸出,反而形成滑身黏稠的果醬般.
